How to Make Gingerbread Salted Caramel Cookie Sandwich from Karamell-Kuche

EPCOT is becoming our very favorite Walt Disney World park. With recent additions like Guardians of the Galaxy: Cosmic Rewind and upcoming additions including Moana: Journey of Water, EPCOT is a really exciting park to visit. With that said, what sets EPCOT apart for us is the World Showcase. There are so many beautiful pavilions. Each one showcases a different country’s unique culture, cuisine, music, and more.

Many people choose to experience these pavilions by “drinking around the world“, meaning getting a drink in every country. Since we have young kids, we prefer “snacking around the world”. In other words, we try snacks offered at the many bakeries, festival food booths, restaurants, and shops in the World Showcase. One snack that we keep coming back to is the sweet and salty Gingerbread Salted Caramel Cookie Sandwich at Karamell-Kuche.

The World Showcase is one of our favorite places to visit in Disney World. It is something that helps set Walt Disney World apart from other Disney parks worldwide. For those who are unfamiliar, the World Showcase consists of 11 country pavilions surrounding the World Showcase Lagoon. Each pavilion has restaurants, shops, music, and other thematic elements that represent that particular country. Some of them even have themed rides and shows! The countries represented are the following: Mexico, Norway, China, Germany, Italy, The United States, Japan, Morocco, France, United Kingdom, and Canada.

Gingerbread Salted Caramel Cookie Sandwich Recipe

Ingredients:

  • 1 Box Gingerbread Cake & Cookie Mix
  • 1/4 C Water
  • 3 Tbsp Butter, Melted
  • Whipped Butter Cream Frosting
  • 15 Werther’s Soft Caramels
  • 1.5 Tsp Milk

Instructions:

Makes: 8 SandwichesPrep Time: 2 Hours 15 MinutesCook Time: 8-10 Minutes
  1. Dump Cookie Mix into mixing bowl. Break up any clumps.
  2. Add water and melted butter. Mix until you form a smooth dough.
  3. Cover with plastic wrap and refrigerate for 2 hours or freeze for 30 minutes.
  4. Preheat oven to 375F.
  5. Form dough into balls using a cookie scooper or tablespoon.
  6. Bake for 8-10 minutes. Cool on baking sheet for a few minutes. For best results you want to bake these a little on the softer side to make the perfect sandwich texture.
  7. Transfer to parchment paper.
  8. Begin icing. Flip half the cookies upside down, add your desired amount of frosting.
  9. Make caramel by placing 15 caramels in a microwave safe dish with 1.5 Tsp milk. Microwave 30 seconds and stir. You’ll want this to be a smooth consistency.
  10. Drizzle your caramel over the frosted half of your cookies. Use as much or as little as you want.
  11. Place unfrosted cookies on top to form sandwiches. Let rest for 5-10 minutes.
  12. Eat immediately or refrigerate.
