How to Make ‘Ohana Bread Pudding from Disney’s Polynesian Resort

My wife is a big fan of chocolate. Actually, that’s a bit of an understatement. I would say she’s a full blown choco-holic. If given a choice, she will always opt for a dessert that contains as much chocolate as possible. That’s why I was so surprised when she told me that ‘Ohana Bread Pudding is one of her all time favorite Walt Disney World desserts! Trust me: if she gives that kind of praise to a non-chocolate dessert, it’s worth trying.

‘Ohana at Disney’s Polynesian Village Resort

Ohana is a classic Disney World all-you-care-to-enjoy restaurant. For breakfast this ‘Ohana serves as a character dining meal with Lilo & Stitch and friends along with classic Disney breakfast foods like Mickey Waffles. For dinner, ‘Ohana offers the famous noodles and wings along with an assortment of meats. One of the best parts of dinner at ‘Ohana is when they bring out the warm bread pudding with ice cream and Bananas Foster Sauce.

Recipe:

Bread Pudding Ingredients:

1 Loaf French Bread (Homemade or Store bought)- 10 Cups

5 Large Eggs

1/2 Tsp Salt

1 1/2 Cups Sugar

1/2 Tsp Cinnamon

1/4 Tsp Nutmeg

3 Cups Whole Milk

1/2 Cup drained, Crushed Pineapple

1/4 Cup Unsweetened Shredded Coconut

Bananas Foster Sauce:

1/2 Cup White Sugar

1/2 Cup Brown Sugar

1 Stick of Unsalted Butter

1 Cup Heavy Cream (divided)

1/2 Cup Light Corn Syrup

1 Tsp Vanilla Extract

1 Cup Spiced Rum (at least 40% ABV)

2 Sliced Bananas

Instructions:

Bread Pudding:

  1. Preheat oven to 350F.
  2. Cut bread into 1-inch cubes and set aside.
  3. In a large bowl combine the rest of the ingredients. Fold in the bread cubes.
  4. Pour entire mixture into a 9×13 pan.
  5. Bake 50-60 minutes. You are looking for a nice golden top but a soft inside.

Bananas Foster Sauce:

  1. Combine Sugars, Butter, Corn Syrup, and 1/2 Cup of Heavy Cream. Bring to a boil before slowly adding remaining heavy cream. Keep the mixture at a steady boil.
  2. Add the Spiced Rum and Flambé.
  3. After about 3 minutes, remove from heat. Add Vanilla and Banana Slices.

Best to serve Bread Pudding fresh and warm with Vanilla Ice Cream and topped with Bananas Foster Sauce.

‘Ohana Bread Pudding Results

This dessert is the perfect combination of sweet and spicy, gooey and crispy, warm and cold. Bread pudding can sometimes be too soggy for me and you don’t get to taste all the contrast of flavors but this version is not like that at all. A crowd pleasing dessert every time!
